Outside the butter- colored building, shiny sil- ver tank trucks wait their turn to unload. Some are just in from farms in the Yakima Valley, full of fresh, raw milk. Others carry cream from Darigold plants in Lynden, Spokane or Seat- tle. Drivers work on and around their rigs, hosing them down and making sure the frothy cargo is flowing smoothly. For storage, the milk and cream are pumped into four huge silos, each with a 50,000 gallon capacity. Each day, nearly 140,000 gallons are sent into _the plant. Just inside the plant sits the separator. A squat, stainless steel cylinder, this machine breaks down the arriving milk into skim and cream before it passes on to the rest of the factory. Around the separator, on a scrubbed, red tile floor, white-clad employees monitor .temperature and pressure dials. The roar of the machinery keeps any conversation to a minimum. Next for the milk is the pasteurizer, a maze of silver pipes, radiators and con- duits, which alternately heat and cool the milk prior to further processing.
